Veg Rice (Biriyani – modified version)

Lazy, yet quick and tasty recipe


1. Basmathi rice – 2 cups
2. Vegs (beans, carrot, cauliflower, broccoli, cabbage, mutter, capsicum, potato) all together 1 cup —- make equal measurements
3. garam masala items (not powder) —- lavanga, patta, cloves, elachi, annachi flower (those who know exact names in english, please translate it )
4. Ghee or butter 2 teaspoons
5. Tomato – 1 ripen
6. Coriander and pudhina leaves
7. Green chilly – 2
8. Ginger garlic paste – 1 teaspoon
9. Turmeric & salt powders


1. Put ghee or butter in a pressure cooker.
2. Add the garam masala items and fry for few secs
3. Add ginger garlic paste and fry till the fresh smell goes off
4. Add all vegs, tomato and chilli and fry for few secs
5. Wash the rice and add to it.
6. Add little turmeric powder and salt for taste
6. Keep exact water (for the measurements given here, I keep 2 cups of water as a whole…… Can increase or decrease depending upon the rice you use….)
7. Close the cooker and cook for one whistle….. Not more than that
8. Remove from flame immediately after the whistle and open immediately after the steam goes off
9. Mix the vegs equally (but don’t mix too hard as the rice will get broken)
10. Cut the coriander and pudhina leaves and place over it
11. Serve with raita or plain curd
